About Thanjavur Adhirasam

Adhirasam is a traditional South Indian sweet and a Tamil Nadu special, famous in Thanjavur and the delta region, made with rice flour and jaggery. It is a must-have Deepavali (Diwali) sweet, and is also made for weddings, seer (wedding gift trays), temple festivals, Pongal and family functions. It is enjoyed as a festive sweet, a tea-time sweet and a homemade gift for relatives. Ours is homemade in small batches with jaggery, with no preservatives added.

Thanjavur Adhirasam Recipe

Ingredients (for 1 kg raw rice)

  • 1 kg raw rice (pachai arisi)
  • 500 g jaggery (vellam)
  • 10 g cardamom (elakkai)
  • Water, for soaking and for the jaggery syrup
  • Refined oil, for deep frying

Method

  1. Wash the raw rice well and soak it in water for 2 hours.
  2. Drain the water completely.
  3. Add the cardamom and grind the rice into a slightly coarse flour. (At a flour mill, ask for "adhirasam grind" — they will grind it coarse.)
  4. Melt the jaggery with a little water and boil it into a syrup (paagu).
  5. Check the syrup: drop a little into a plate of water. When it forms a soft, jelly-like ball you can pick up, the syrup is ready.
  6. Add the hot syrup to the flour little by little, stirring continuously.
  7. Keep mixing until the dough is neither too thick nor too watery — a soft, semi-solid consistency.
  8. Cover and rest the dough for 2 days.
  9. Take small portions, pat them into flat rounds, and deep fry in refined oil until golden brown. Your Thanjavur special adhirasam is ready.

Frequently Asked Questions

How do you make adhirasam at home?

Soak raw rice for 2 hours, grind it coarse with cardamom, mix in jaggery syrup at the right consistency, rest the dough for 2 days, then pat into rounds and deep fry.

What is the rice to jaggery ratio for adhirasam?

1 kg raw rice to 500 g jaggery.

How do I know the jaggery syrup is ready?

Drop a little syrup into a plate of water. If it forms a soft, jelly-like ball, it is ready.

Why is the adhirasam dough rested for 2 days?

Resting lets the flour absorb the jaggery syrup fully, giving adhirasam its soft texture and rich taste.

Should adhirasam flour be fine or coarse?

Slightly coarse. Flour mills grind it this way when you ask for adhirasam flour.

How long does homemade adhirasam stay fresh?

Stored in an airtight container, it stays fresh for about a week to 10 days.

Is your adhirasam preservative-free?

Yes, it is homemade with jaggery and no preservatives added.
